Mango Cheesecake (Baked)

Happy Monday. How's your Monday so far?.. I hope it shall be great, though we're in the midst of bad air condition. The haze is getting worse day by day. Just make sure you stay at home, shut the doors and windows. For those who're at outside, just remember to put on face mask, ok..
So today I'm gonna share with you this Baked Mango Cheesecake recipe which I got from Catherine Lau book.

 Cheesecakes Recipe Book by Catherine Lau. 
My favorite recipe book. A lot of guide and tips. I bought this book about 5 years ago. And I have used it just recently. I don't know why I took so long to jump into this baking line. I was so eager to do baking years back, but I didn't put effort to buy baking tools and ingredients until September last year..haha!



This is my first time to make a baked cheesecake. All these while, i do the chilled method. I found the baked cheesecake is tasty, though the process of baking it was quite hard. I mean it wasn't that hard, but you need to go through a long of process. 

From preparing ingredients, and to produce cake batter. Put the springform pan in another cake tin which is a bit larger, and fills with hot water (water bath method). You must leave the cake about 30 minutes inside the oven after it has cooked, and then remove the water bath, put back the cake in the oven until it is completely cool with the oven door a jar. Phew! it's quite a lot isn't it?.. But i know, I have to do it many times, then I'll get use to it.

 Okay, I'm quite lazy to type down the recipe. Here's the recipe I shot by using my iphone.


 And here's the biscuit base method.


For the biscuit base, I didn't follow this recipe because of lacked of ingredients. I don't have digestive biscuit at home so I just took any biscuit that available at kitchen, so i used Chipsmore cookies haha.

I used 90 g crushed Chipsmore cookies, combined with  2 tbsp melted butter.



 Tadaa!!.. Here's my Baked Mango Cheesecake :)

    Skrg i know why cheesecake mahal sbb bahan2 dia pun mahal. whipping cream ja pun mo RM15 yg 250g, cheese cream pun yg 200g pun suda RM7..ayayayai!

  4. aiya time2 sakit biasanya x selera makan..tp nmpak ni macam mau pula asap haha...eiii sya x baca betul tu ingredients, ramai betul bahan2 n steps hehe patutlah cheesecake slalu mahal kan

    1. could be the same..but if you reduce the ingredients might be a bit less time than usual
