No-Bake Cheesecake

Hello dear friends,
for those who're asking me for the no-bake cheesecake recipe, now i write it down here in this post. :D

I received this no-bake cheesecake recipe from a friend, Ms Conchita. She's handy with baking. She's also the one who influences me to bake cheesecakes.

I didn't ever know that you can bake a cheesecake without oven. Yes, you can just put it inside your refrigerator. Thanks to Conchita for telling me this and for the recipe! :)

My first cake was Steamed Chocolate Moist Cake. And recently I love to bake cheesecake. I guess it is because I myself really love to eat cheesecake. I have baked 4 cakes all-together now and 3 of them are cheesecakes.. :D

Actually this recipe is from momswhothink.com. Conchita gave me this website link for me to refer.

Here are the recipe:-

Ingredients:
1 graham cracker crust
2 8-ounce packages cream cheese, softened
1/4 cup white sugar
1 teaspoon pure vanilla extract
1 cup heavy whipping cream

Directions:
1. Beat the cream cheese until smooth, then slowly add the sugar and vanilla. Beat mixture until well blended.
2. In a clean chilled bowl, beat the whipping cream until soft peaks form.
3. Slowly beat the whipped cream into the cream cheese mixture.
4. Spoon filling mixture into graham cracker crust. Chill for 4-6 hours before serving.

By the way, I changed the recipe slightly. I use Marie Crackers for the crust.

The crust Ingredients:
- 15 Marie crackers
- 1/2 cup sugar
- 1/4 cup melted butter

Combine Marie Crackers Crust ingredients and press into a 6-inch pan.(you can use 9-inch pan too). And then chill it for about 2 hours.

And you can add gelatin for the filling too. It's optional. For me, I use gelatin so that the filling becomes firmer and longer it stands. Put about 2 teaspoon of gelatin in 1/4 cup of cold water leave for a minute, and then cook and stir over low heat until dissolved. Add the dissolved gelatin into the mixture of cream cheese and whipping cream.

You can choose any topping you like for your cheesecake too. I use strawberry jam for the topping. :)

Okay, that's all for now. I'm not that perfect in baking. Still a lot of things to learn. In fact, I'm a newbie. It's that I am just happy to share this recipe with you. :)

p/s: Hubby brought the cheesecake to office yesterday morning and his colleagues like it very much. In fact they asked for more, unfortunately that's our last homemade cheesecake here in Kudat. After all, there's no more whipping cream and sugar left.
